
Groundhog Day is my favorite holiday. You don’t have to do anything at all to celebrate. You don’t even need to follow what’s happening in Punxsutawney, PA. Someone is bound to mention whether Phil saw his shadow or not. At any rate, spring will arrive on time, in its own sweet time. Whatever you do is okay, because you can make your own traditions. This year, I’m making potato salad for Groundhog Day. I could chunter on about potatoes being winter food, or that both potatoes and groundhogs are lumpy and come up from beneath the dirt, or that these particular potatoes looked exactly like groundhogs if you squint real hard. The truth is, I’m making potato salad because I can, and no one can stop me! Bwa-ha-ha-ha!
